What Is Homogenization?
Homogenization is the process of forcing a heterogeneous fluid product through a narrow gap under high pressure, micronizing its particles and making it permanently uniform. During this process the surface area of the fluid increases significantly, and viscosity, stability and visual properties all improve.
The difference between homogeneous and heterogeneous can be summarized as follows: in a homogeneous structure the components form a single phase and are evenly distributed, whereas in a heterogeneous structure the components exist in different phases and are unevenly distributed. For example, in non-homogenized raw milk the fat collects in a layer on the surface, while in homogenized milk the fat globules are reduced to micron level and distributed evenly throughout the milk.
